In the spring of 2020, in response to the food insecurity that the pandemic would likely bring to some of the families in their community, the Moab church used an approximately 12-acre lot owned by a community member to plant potatoes—a project called Moab Manna. “The church was trying to step back from the immediate circumstances of the coronavirus and look at what sort of side effects or consequences it could have,” said Pastor Nathan James of the Seventh-day Adventist Church, in a Moab Sun News article. This farming endeavor is already helping foster local food resiliency, and over 25,000 pounds of potatoes have been harvested. The potato crop is expected to yield between 250,000 to 600,000 pounds. Those who come to harvest potatoes are invited to take as much as they’d like, with the request that they collect the same amount to be donated. The potatoes designated for donation are picked up by the Utah Food Bank based in Salt Lake City.
